How To Make Liberian Jollof Rice With Chicken
- Pound Chicken
- A can of mixed vegetables
- salt and pepper
- A can of tomato paste
- 1 Onion
- 4 Maggic cubes
- 1/2 lb.of salt Pork,
- 1 kilo of rice
- Ham or Beef
- Hot pepper
Directions: How To Make Liberian Jollof Rice
Season Chicken with salt and pepper and let it steam for about five minutes. Fry chicken until it’s turn brown in a frying pan with one half cup hot oil. Then, put the Chicken in a cooking pot.
In the same frying pan add Onion, one half pound cubed salt Pork, Ham, or Beef then fry them lightly and add to the Chicken. Put together the mixed vegetables, A can of tomato paste, three Maggic cubes, salt and pepper to taste. Simmer ten minutes. Add 1 kilo of rice, stir well, and cook slowly 35 to 45 minutes.
Variations could include Shrimp or spare ribs. Variations of vegetables could include string beans and stewed tomatoes. Different types of meat are often used to make your jollof rice rich and sweet.
